TOTAL TIME: 30 minutes

1 pound fresh spinach rinsed
3 green onions chopped
3 tablespoons olive oil plus more for drizzling
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon thyme
1 tablespoon chopped dill
1/3 cup rice
1 tablespoon Salt
1 tablespoon Pepper
2 tablespoons lemon juice

1. In a large pot boil the spinach for 3-4 minutes. Set aside to drain.
2. In another pot sauté the onion with the olive oil until soft.
3. Add the spinach, and all the other ingredients and 3 cups of water and bring to a boil.
4. Boil for 15-20 minutes. Add additional warm water as needed.
