- 2 tbsp olive oil
- 2 cups vegetable broth
- 2 tsp oregano
- 1 tsp thyme
- 1 onion chopped
- 1 tsp garlic powder
- 3 potatoes, peeled and cut into small pieces
- 2 sweet potatoes, peeled and cut into small pieces
- 1 zucchini, peeled and cut into small pieces
- 3 carrots, peeled and cut into small pieces
- 3 celery ribs, cut into small pieces
- 1 bay leaf
