1/2 cup olive oil
3 cups boiled spring mix or spinach
1 teaspoon dill
1 teaspoon oregano
1 teaspoon thyme
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons nutmeg
1 cup feta cheese crumbled
1 cup grated cheese
1 teaspoon ground pepper
2 teaspoons salt
1 egg
1 cup yoghurt
1 sheet puff pastry

1. Preheat the oven to 400oF.
2. Boil the spinach or green mix for 5′-6′.
3. In a pan put the olive oil and sauté the spinach/green mix until it softens.
4. Tear up the spinach/green mix with your hands and transfer to a bowl. Add the dill, onion powder, garlic powder, nutmeg, feta cheese, cheese, pepper, salt, egg, thyme, yoghurt and oregano. Stir everything.
5. Unfold one sheet of puff pastry and place it on a baking sheet lined with parchment paper. With the tip of a sharp paring knife, lightly score a border 3/4 inch from edges (being careful not to cut through the puff pastry).
6. Spread the spinach mixture on the pastry sheet up to the scored borderline. Brush the border with the egg wash, if desired. Bake for 20 to 30 minutes, until the pastry is lightly browned and filling has puffed up. Transfer to a cutting board and serve hot.
