Ingredients
- 4 fillets pink salmon
- 3-4 potatoes peeled and cut in small pieces
- 1 pound frozen spinach
- juice from one lemon
- juice from one orange
- 1/4 cup olive oil
- 1/3 cup water
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp white ground pepper
Instructions
- Boil the spinach and drain it.
- Boil the potatoes and in a bowl, mix them with 2 tbsp olive oil, some salt and pepper.
- Preheat the oven to 380oF.
- Mix all the spices in a bowl.
- In a baking dish put the spinach and on top the salmon.
- Sprinkle with the spices.
- Pour the olive oil, the juice from lemon and orange, and the water.
- Bake for 20-30 minutes
